Healthy Cereal Recipe

Cereal. I used to eat a lot of it when I was growing up. Eventually I gave it up completely and switched over to oatmeal. But from time to time the idea of some crunchy cereal really appeals to me, and this recipe works perfectly for those occasions. It’s also a great healthy alternative to the processed, pre-packaged, high sugar/salt cereals that you buy. Best of all it tastes great!

Honey – A Healthy Sweetener, When Used In Moderation

The keys to using honey as part of a healthy diet are quality and quantity. You want to go for a top quality organic honey that has been minimally processed so it can retain it’s beneficial qualities, ideally a set honey. These healthy qualities include antioxidants, enzymes and phytonutrients (nutrients obtained from plants).

Yes, honey is very sweet and quite high in sugars. However they are naturally occurring sugars, and the actual amount of honey you’ll be eating in a single serving is quite small. Plus the fibre in the oats, and the oat bran, will help to control any effects on blood sugar. You can of course always use less honey if you are still concerned with the amount called for in the recipe.

What You Will Need

300 grams organic jumbo rolled oats

2 tbsp organic set honey

40 grams organic oat bran

80 grams organic whole almonds, chopped

70 grams organic pumpkin seeds

Optional – chopped hazelnuts, sunflower seeds, top with fresh berries of choice just before eating.

Let’s Go…

1. Measure the oats into a large mixing bowl and set aside.

Next, preheat your oven to 180 °C/356 °F (160 °C / 320 °F for fan ovens). While the oven is heating chop the almonds…

2. Next place the honey in a small pot or sauce pan and heat very gently over a low heat…

3. Continue to gently heat the honey until evenly melted, being careful not to let it reach boiling point…

4. Once melted, pour the honey over the oats and mix with a wooden spoon until oats are thoroughly coated. Next empty the mix on to a baking tray, spreading evenly to all corners…

5. Place the tray into the oven on the middle shelf and cook for about 6 – 8 minutes (this will vary depending on your oven)…

6. Check regularly, and give it a quick stir as it can go from looking under-cooked to being burnt very easily, so keep a close eye on it!…

7. Next add the chopped almonds and pumpkin seeds. Spread over the top of the oats and allow to cook for another 3 minutes (again this will vary depending on your oven). This is the point where the mix can easily burn, so really keep an eye on it at this stage…

8. Switch off the oven, remove the tray and allow to cool for a few minutes…

9. Next add the oat bran…

10. Stir through the cereal mix. Once completely cooled store in an airtight container…

11. Enjoy with cold milk. Cow’s milk, goat’s milk, almond milk, hazelnut milk, etc. Whatever you prefer…
