Healthy Granola Bites
This recipe was inspired by a comment Ray left on my Healthy Cereal Recipe post. So I set out to see if I could make a bar version of that recipe and after a bit of tweaking I think I got it just right. But be warned they definitely taste like “more”!
They are quite high in calories so just because they’re healthy doesn’t mean they’re calorie free. I think they work best if you’re very active or looking to add muscle and still want to eat healthy. However, if maximum weight loss is your goal, you might want to skip this recipe for the moment. On the plus side they are a healthy alternative to cookies, chocolate bars or even granola bars you buy and are full of fibre, antioxidants and healthy fats.

Another way to use this recipe is as a much healthier snack for your kids than the processed stuff you buy. They are so simple to make, you can get your kids to help! Any opportunity to teach your kids about preparing meals from scratch is a positive one. Phew, having got all of that off my chest…
What You Will Need
125 grams/ 4 0z organic rolled oats
125 grams/ 4 0z organic coconut oil
3 tablespoons organic set honey
50 grams/ 2 0z organic desiccated coconut
125 grams/ 4 0z organic dried goji berries
2 tablespoons organic sesame seeds
30 grams/ 1 oz organic oat bran
Let’s Go…
1. Preheat your oven to 180 °C/ 356 °F (160 °C / 320 °F for fan ovens). Add the coconut oil and honey to the pot and heat very gently over a low heat…
2. While the oil and honey are melting add the remaining ingredients to a large mixing bowl. Then add the oil/honey mixture…
3. Stir until the dry ingredients are fully coated. Then transfer to a greases baking try…
4. Using a wooden spoon or spatula, flatten the mixture on to the tray. Make sure you don’t spread it too thin or it will burn. If you prefer you could use a smaller tray or double up the ingredients…
5. Next place the tray on the middle shelf in the preheated oven and cook for approx. 25 minutes…
6. Check after about 20 minutes to make sure they don’t burn. After 25 minutes remove from the oven and allow to cool fully…
7. Once cooled, cut into squares and carefully remove from the tray. If you cut them while still warm they will fall apart…
8. Enjoy!
These taste way too good, and I have to admit I ate two right after I cut them. They should hold for a few days if you store them in an airtight container, but storing them may not be a problem 🙂
