Salmon Burgers Recipe
I love salmon, it’s an excellent source of protein, it’s full of omega-3 essential fatty acids and it contains a powerful antioxidant called astaxanthin which mops up free radicals. Even if you’re not a fan of salmon, that’s not a problem because you can’t even taste it. Plus these burgers are so moist and juicy I’m sure they will become a regular addition to your menu.
What You Will Need…
1 medium red onion, diced
1″ piece ginger root, grated
1 lime, half for recipe, half for garnish
1 shallot (or clove garlic), minced
1 egg, beaten
1/2 tsp cumin
400g canned wild Alaskan salmon, strained (you can also use fresh, cooked salmon)
1 tbsp coconut oil
Leafy green vegetables of choice – spinach, broccoli etc..
Let’s Go…
1. Remove skin from onion and shallot, slice into quarters a and chop in a small food processor. Then grate the fresh ginger…
2. Place the salmon, red onion, shallot, ginger, lime juice, cumin and egg into a large mixing bowl…
3. Mix with a wooden spoon until mixed…
4. Take a small handful of the mixture in your hand and a shape into a patty. Repeat until mixture is used. Should make 5 – 6 patties. If you have time, cover and leave in the fridge for a couple of hours for easier handling when cooking…
5. Add a tablespoon of coconut oil to a frying pan and heat over medium-high until melted. Then add the patties…
6. Cook for 5 minutes on one side, then carefully turn over and cook for a further 5 minutes. (Only turn once)…
7. Remove from the heat, heap your plate with veggies of choice and squeeze a little fresh lime juice on top of the burgers…
8. Enjoy!
