Strawberry Salad
Strawberries add a sweet contrast to this super healthy, summer salad.
Salads are a great way to get more leafy greens into our daily diet, but for various reasons, they may not always be the most appealing idea. For some, they associate salads with limp lettuce, or watery tomatoes. For others, the idea is great, but they don’t know what makes a salad, a tasty salad.
This recipe is really simple, really tasty, and it’s quick!
I used ready washed greens, to save time. The mix consisted of baby leaf spinach, ruby chard, rocket/arugula, and . Any one of these individually will work great. Although, if you plane to make a big salad, rocket on it’s on may be a little to peppery for some. Baby leaf spinach has a much more mild taste, so you could use it alone, or mix it with a stronger greens like rocket or watercress.
What you will need
Leafy greens of choice, washed and dried
Strawberries, washed, and cubed
Walnuts, broken into pieces (pecans would also work)
Balsamic vinegar
Extra virgin olive oil (optional)
To prepare
In a bowl, add the leafy greens and cubed strawberries. Gently toss to combine.
Sprinkle on the balsamic vinegar to taste. Then pour over a small amount of olive oil, if using. Be sure to add the balsamic vinegar before the olive oil. If you fo it the other way around, the oil will prevent the vinegar being absorbed.
Finish by sprinkling the walnut pieces on top.
Extras
If you want, you can try adding cubes of avocado, finely sliced coriander/cilantro, or fresh basil.
